Roasted Tomato and Goat Cheese on a Bagel
Juicy, caramelized tomatoes pair beautifully with creamy goat cheese, all served on a crisp bagel or slice of artisan bread.

Ingredients
For the Roasted Tomatoes

Tomatoes, halved or quartered

Olive Oil

Kosher Salt
For the Roasted Tomatoes on a Bagel

Bagel, preferably whole wheat
4
tbsp
Goat Cheese
1
tbsp
Balsamic Glaze
1/2
tsp
Black Pepper
Instructions
Cut tomatoes in half and place cut side up on a sheet pan.
Drizzle with olive oil and season with salt.
Add aromatics
(optional):Toss in whole garlic cloves or sprinkle with herbs.
Roast for 30–35 minutes
at 450 degrees F, or until tomatoes are soft, blistered, and slightly caramelized.
Allow to cool before using or storing.
Toast the bagel or bread
until golden and crisp.
Spread goat cheese
generously on the warm toast.
Top with roasted tomatoes
, either whole or slightly smashed.
Drizzle with olive oil.
Garnish
with fresh basil and a touch of balsamic glaze for extra flavor.
