Ingredients
1/2cupButter, room temperature
1cupMonk Fruit Sweetener Blend
2Eggs
3Bananas, ripened and mashed
1 3/4cupAll purpose flour
1tspBaking soda
1/2tspSea salt
1/2tspVanilla extract
1/2cupWalnuts, chopped
1/2cupChocolate chips (optional)
Instructions
Mix together butter and monk fruit sweetener blend until incorporated
Add eggs one at a time, then add mashed bananas to combine well
Sift together flour, baking soda and salt then add to the creamed mixture
Add vanilla
Mix only to combine, then add walnuts and chocolate chips (optional)
Pour prepared batter into parchment lined cast iron pan
Bake in a preheated oven at 350 degrees F for 45 minutes in a parchment lined 12" diameter cast iron pan (adjust time according to your oven temperature & baking equipment). 350 degrees F for 35 minutes for two parchment lined loaf pans, or 20 minutes for muffins. Use a toothpick to poke the middle to ensure doneness. Toothpick should come out clean.
Notes
